Direction: Heat 1 quart of pasteurized Light Cream or Half and Half to 86 Degrees F. Add 1 packet, let re-hydrate 2 minutes then stirto dissolve. Cover and let set at 72 Degrees F for 12 hours or until thickened. Refrigerate and enjoy!

 For a Mascarpone type cheese, ladle curds gently into a butter muslin lined colonder, hang and drain 4-6 hurs.
